Why Raw & Unpasteurized?
Wheatgrass juice is extremely bioavailable in its raw, unpasteurized form. Why is this? Wheatgrass requires 50 times more pressure to juice than any other fruit or vegetables. This force pulverizes the cellular structures and expresses out minuscule nutritional elements which are very easy for the body to assimilate. 

High temperatures used in pasteurization kill vital enzymes and other valuable components of the living grass. Other forms of processing such as dehydration, irradiation, bottling, etc. produce a shelf-stable but denatured product that provides only a fraction of the full nutrient value you should be getting. 

Why Field-Grown? 
Molds often contaminate wheatgrass when it is grown indoors or in greenhouses. These molds release mycotoxins which taste terrible and cause side effects such as dizziness, headaches, nausea and purging. 

Field-grown wheat grows outdoors in a natural environment takes 120 days to grow to harvest height. It is not artificially accelerated by like greenhouse products, which take only 7-10 days to reach harvesting height. During its growth phase, the wheat plant produces strong, deep roots that reach down 12" into the soil, allowing the development of a nutrient-rich plant. It is also exposed to direct sunlight, in the field, which results in high chlorophyll and phytonutrient content.
